Okay, the first thing you should know about me, is that I LOVE salads, especially for lunch!! They’re refreshing, and I can pack all my food groups into a single, nourishing, super-delicious meal. And in terms of ingredients, the sky’s the limit!!
On the heels of a nasty bug that wreaked havoc on my household this week, I decided to go straight for my (not so) secret Flu-Busting salad ingredient: SQUASH!! These humble garden beauties are absolutely PACKED with powerful vitamins and antioxidants that boost the immune system like crazy! Vitamin A, folic acid, Vitamins C and B6, manganese, copper, potassium, and Vitamin K–squash contains them all. Talk about a SUPERHERO veggie!
For today’s salad, I simply roasted one whole acorn squash in the oven at 350 degrees F until tender (about an hour), then scooped out the deliciously nutty, slightly sweet flesh when cooled, and added it to my salad.
In addition to all the flu-busting goodness, squash can also help you fight the blues! Root vegetables and other healthy carbohydrates, like pumpkin and steel cut oats, pump up the serotonin levels, giving you a boost of happiness. When you’re happy, you’re more likely to get adequate exercise, eat right, and sleep well; all of which boost immunity too!
It’s spring! Time to break our winter hibernation and get outside. It’s more important than ever to pack our bodies full of nutritious foods so that we can take advantage when the spring sunshine calls us OUTSIDE!
