Looking for a quick and easy, super nutritious lunch or snack idea? Try these tuna salad avocado boats! These concoctions are power-packed with protein and healthy fats, with an extra veggie boost! Tuna salad avocado boats are my go to snack before parties, when I want to make sure I don’t over-indulge on unhealthy foods. (Never show up at a party hungry, right?!)

And an added benefit is that kids love these super nutritious snacks because, hey! Boat-shaped foods are just plain fun to eat!

TIP: Tuna salad leftovers make for amazing sandwiches the next day! Especially with some sliced dill pickle tossed in to the mix. (Please tell me I’m not the only one who loves pickles in her tuna?!)


Avocado (halved, seed removed)

1 can albacore tuna in water (flakes or chunks)

1/4 red pepper, diced

Red onion, diced (to taste)

1 stalk celery, diced

A few cherry tomatoes, sliced in half

1 teaspoon Dijon mustard (or to taste)

1 tablespoon Bolthouse Cilantro-Avocado salad dressing or Greek yogurt (or to taste)

Salt and pepper

Top with pea shoots or fresh sprouts!



Mix all ingredients together, and spoon a generous dollop of mixture into half an avocado. Top with fresh pea shoots or sprouts, and sprinkle with salt and pepper. Grab a spoon, and enjoy!
